Meet Justin Zammit, Executive Chef...
Our Executive Chef, Justin Zammit, began his career in 1995 where he
undertook his apprenticeship at the leading Hilton Hotel Group.
Justin's love of cooking however began well before this as he grew up in an
Italian family swinging from his Nonna's apron where meal times were a significant
focus of the family's daily routine.
Justin's Nonna was his primary cooking inspiration and her passion for food
was contagious. He spent many hours in the kitchen with her as she prepared the
family meals, creating sensational dishes with grace, simplicity and ease.
Justin refined his passion for food during his apprenticeship at the Sydney
Hilton where the style and focus of the food was European. Following this apprenticeship,
Justin went to work on Lizard Island in Queensland where he further broadened
his skill and talent for fusion cooking.
Justin then moved back to Sydney where he worked at Martin Place's acclaimed
three chef hat Banc restaurant where he developed his knowledge and passion for
French cuisine.
I chose to head the
Crystal Palace catering team as they were unlike any other function kitchen and
had strategically designed a quality team of restaurant chefs. This is a new philosophy
within the Australian catering market and I was excited by the opportunity to
make a mark on the industry at this pivotal time..

The international market then beckoned and Justin spent two extraordinary
years working in a variety of restaurants and disciplines; Giddleigh
Park, 2 Michellin star, 5 rosettes U.K boutique hotel (french cuisine),
Italy (Palazzo Sasso), France (Neats), and various Michellin star
establishments (predominently Italian and French cuisine) during
holidays and days off to gain more experience and refine his skills.
On returning to Australia, Justin worked on Hayman Island running the La Trattoria
Italian restaurant before joining The Cuisine Group in July
2005.
In 2006 Justin joined The Crystal Palace team as Executive Chef, and made the transition across into function
catering to challenge himself - delivering restaurant quality food for large numbers
in a function environment.
